Cinnamon Roll Muffins

As you may already know I love a bit of baking, especially this time of year because a lot of the time its cold and rainy outside so its nice to stay in for an afternoon or a couple of hours to do some baking. Its also a great time to try out different recipes and ideas as you normally get some days off work, some pajama days to use to bake some cake.

The other rainy weekend that is what I spent the afternoon doing. I found a delicious looking recipe on pinterest from the blog some the wiser. Cinnamon roll muffins. As its winter I love baking things with different spices in and these just looked amazing. 

If you want to try them out the basic recipe is (the recipe is an American recipe so the measurements are in cups but I just looked up the equal amount in grams):

  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup sugar
  • 3 tablespoons butter
  • 1 egg
  • 1 cup milk

Topping and Filling

  • 1 cup brown sugar, loosely packed
  • 3 teaspoons ground cinnamon
  • 1½ cups coarsely chopped pecans or walnuts
  • 3 tablespoons melted butter

  • Icing sugar
  • Water

  1. Preheat oven to 200 degrees. Generously grease a standard 12 cup muffin tin.
  2. In a large bowl, sift together the dry ingredients. In a separate bowl, whisk together the wet ingredients until well combined. Make a well in the center of the flour mixture and add the egg mixture, stirring only until just combined.
  3. Combine all the topping/filling ingredients. Gently fold half of the mixture into the muffin batter.
  4. Spoon the muffin batter into each muffin tin. Top with remaining brown sugar mixture. Bake at 200 degrees for 12 to 15 minutes, or until muffins spring back when pressed lightly. Remove from oven. Cool slightly, then transfer carefully to a wire rack.
  5. Mix together icing sugar & water to make quite a thin drizzly icing. Drizzle over the top of the muffins and you're done! 

They tasted soo amazing, it was just like you were eating a cinnamon roll or those cinnamon coated warm doughnuts. The crunchy cinnamon sugar on the top with the drizzle of icing was soo delicious. I would definitely recommend trying them out.
