Autumn Gingerbread Cookies

As you may have read on my blog post yesterday, I have a few things that I want to do this autumn/winter to get all the cold, autumny vibes. One of the things being do more baking over the next few months. And last weekend that is exactly what me and my sister spent the afternoon doing. 

We decided to make autumn leaf shaped gingerbread cookies. I had recently purchased some leaf cookie cutters from etsy and thought they would look super cute especially this time of year. We just used a basic gingerbread recipe that we have used before. 

If you want to try making them yourself, the ingredients we used are:

350g plain flour
1 tsp bicarbonate of soda
2 tsp of ground ginger
1 tsp of cinnamon
125g butter
175g light brown sugar
1 large egg
4 tbsp golden syrup

To make the cookies:

First pre-heat oven to 180c and line 2 baking trays with greaseproof paper.
Then  sift together the flour, bicarbonate of soda, ginger and cinnamon and mix in a food processor. Add the butter and blend until the mixture looks like breadcrumbs. Stir in the sugar.

Lightly beat the egg and golden syrup together and add to the mixture and pulse until the mixture clumps together. Tip the dough out and knead until smooth and then place in clingfilm and leave to chill in the fridge for 15 minutes. 

Roll out the dough on floured surface and cut out shapes and place on the baking trays. 

Bake for 12-15 minutes or until golden brown. Leave to cool then ice however you like! We used red and orange colours for the leaves and also sprinkled in some cinnamon into the icing sugar which tasted delicious! 

We love how the cookies came out, they look so cute and they taste really yummy. We are definitely going to try out a lot more bakes over the next few months so look out for them too!
